Reliable and one of my all-time favorite easy, delicious recipes- not to mention it’s a real crowd pleaser – this baked brie recipe with jam is a very popular appetizer to serve at almost any kind of gathering.
It’s one of the easiest appetizers out there, here’s a few good reasons to give it a try:
- Super easy. It’s a quick appetizer that looks as good as it tastes.
- It’s delicious by itself with crackers or toasted bread, or to accompany cheese or charcuterie boards.
- The fig jam is especially delicious in this recipe, but almost any flavor of jam (no jelly) will work.
- The sweetness of the jam is absolutely perfect with the creamy brie cheese.
Ingredients You’ll Need
- Puff Pastry: One sheet of puff pastry is all we’ll need.
- Fig Jam: Sweet fig jam is usually in the cheese section of the grocery store.
- Brie: Just a small round will do.
- Pecans: Whole, toasted.
- Beaten Egg: To brush over the top of the pastry right before baking.
Step-By Step Instructions
- The first thing is to measure the pecans whole, then toast them in a 350F degree oven for 8-10 minutes, then chop fine.
- Slice the cheese in half horizontally, and spoon a couple tablespoons of fig jam over the top of the brie, then sprinkle with pecans.
- Place the other half of the brie on top (like a layer cake), then repeat with remaining jam and pecans.
4. Set the prepared brie on the puff pastry sheet, then bring each corner up to cover the brie.
5. Keep pulling the edges of the puff pastry up toward the middle, using a little egg wash to glue the ends together.

6. Seal and pinch the last corner of pastry, then brush the entire thing with egg wash and add a little flaky salt over the top.
7. Bake, transfer to a serving dish, and enjoy the melted brie with baguette slices, fresh herbs and apple slices or grapes.
Tips and Possible Variations
- Pepperidge Farm is the puff pastry I most often use (not sponsored) and each box contains two frozen puff pastry sheets. Remove one and let it defrost in the refrigerator overnight or for several hours.
- Toast the pecans before using in a 350F degree oven for 8-10 minutes.
- Use another flavor of jam instead of fig – try raspberry, apricot, or cherry which are all very good with melted cheese.
- Special note that jelly won’t work with this recipe, so make sure you’re using a fruity jam.
- Let the baked brie sit for a few minutes before cutting it open and serving.
- Prep the whole recipe ahead of time except for the egg wash – do that just before baking.
Serving Ideas
- Garnished with fresh rosemary or thyme, this “brie en croute” can be cut for serving using a small knife.

Baked Brie with Fig Jam
Ingredients
- 1 Puff Pastry sheet see note
- 1 Brie round, approx. 8 ounces
- ¼ cup Fig Jam see note
- ¼ cup Whole Pecans, toasted and chopped see note
- 1 large Egg, lightly beaten with a splash of water
- flaky sea salt, for garnish optional
Instructions
- Preheat the oven to 400F degrees. Line your baking sheet with parchment paper.
- See notes for toasting the pecans. On a lightly floured surface, gently roll out the puff pastry to smooth out the seams and make it an inch or so larger on all sides.
- Slice the brie cheese in half horizontally. On one half with the rind side up, spread half of the fig jam and half the pecans. Add the remaining layer of brie on top of this like a layer cake, and add the rest of the fig jam and chopped pecans. Transfer the puff pastry sheet to the baking sheet with parchment paper, and set the prepared brie in the middle. Prepare the egg wash by cracking the egg in an medium size bowl, and add a little splash of water. Bring each corner of the puff pastry up to cover the brie, using a little of the egg wash to "glue" the edges together – they can be pinched if needed to hold it in place. Place in the refrigerator to chill for 10 minutes before baking.
- Using a pastry brush or clean fingers, brush a thin layer of egg wash over the prepared brie, and sprinkle with a little flaky salt.
- Bake for 40-45 minutes until lightly golden brown. Let it sit for about 10 minutes before serving.
