Maple Dijon Salad Dressing

- ½ teaspoon Orange zest
- 3 tablespoons Orange Juice, fresh squeezed
- 1 tablespoon Lemon Juice, fresh squeezed
- 1 teaspoon Dijon Mustard
- 2 teaspoons Maple Syrup See note
- 1 teaspoon Diamond Crystal Kosher Salt See Note
- ¼ teaspoon Freshly Ground Black Pepper Or lemon Pepper.
- ½ cup Extra Virgin Olive Oil
Using a fine mesh grater or citrus zester, grate ("zest") the outside of the orange skin to make a half a teaspoon. Then cut the orange in half and squeeze out the juice, discarding any seeds. In a medium-sized bowl, add the orange zest, orange juice, lemon juice, Dijon mustard, maple syrup, salt and pepper. Whisk to combine. Drizzle in the olive oil as you continue whisking until the mixture is combined. Alternatively, add all the ingredients to a canning jar (like Ball or Mason) with a tight-fitting lid, and shake it the dressing until it's combined.
Store in the refrigerator for 3-4 days. Let the dressing sit out for 15 minutes before shaking again and serving.
- You may want to add another teaspoon of maple syrup to the dressing, depending how tart your citrus is.
- Diamond Crystal Kosher salt comes in a big box, is inexpensive, and is less salty than other salts, so if you have it, use a teaspoon. Otherwise, use a half teaspoon and continue the recipe, using more salt to taste if needed.
- Experiment with other citrus such as tangerine or mandarins for slightly different flavors!
