- 4 Medium-sized Roma Tomatoes, chopped fine, drained
- 2 Medium "regular" Tomatoes, chopped fine and drained
- ⅓ cup White Onion, chopped fine
- 3 teaspoons Jalapeno, minced, seeds removed
- 3 tablespoons Cilantro, chopped, loosely packed Can use Italian Parsley
- 1-2 Garlic cloves, minced
- 2 tablespoons Fresh Lime Juice
- 1½ teaspoons Kosher salt
- Nutrition information are estimates, this recipe makes approximately 3 cups of salsa.
- Use Italian Parsley if you don't like cilantro.
- Uses more jalapeno if you like it spicier.
- Use any type of medium-sized "regular" tomato in addition to the Roma's in this recipe.
- Roll the lime with the palm of your hand before squeezing, you'll get more juice that way.
- Use garlic powder instead of fresh garlic if you'd like.
