Easy Naan Breakfast Toast with Bacon
Here's the easiest little breakfast upgrade that's warm, special and satisfying.
Once upon a time, breakfast for me was an early-morning stop at a Taco Bell drive-through.
Back then, a Burrito Supreme counted as breakfast, usually eaten behind the wheel — with a spicy drizzle on top, which accessorized my work clothes more than once. (Because nothing says professional like a splatter of red taco sauce on a white blouse.)
Those hectic, rushed mornings of corporate life feel like a lifetime ago. Also, what was I thinking?
I was always rushing around, pushed for time back in those days, and making a good breakfast that could sustain me for the whole morning was not on my radar.
If you can relate to any of this, here’s a quick, easy, satisfying breakfast idea to try, and it just takes a few minutes of assembly time:
One egg
Butter or olive oil
Cooked bacon
A small Naan bread
A little Parmesan cheese
Sliced tomatoes
Chives, parsley or other herbs and greens
Mayo and mustard if you’d like
Heat the butter or olive oil in a non-stick skillet, add the egg.
Sprinkle some Parmesan around the edges of the egg to make it extra crispy and delicious.
Cook your egg the way you like.
Heat up the Naan bread, smear on a little mayo & mustard, top with the egg and bacon, and finish with tomatoes, chives or other herbs, and more Parmesan cheese.
Turns out, a real breakfast beats the drive-through every time.
NAAN BREAKFAST IDEA with Egg and Bacon
Here’s an easy upgrade to eggs and toast, plus it’s infinitely customizable.
Makes 1
Ingredients:
• 1 tablespoon olive oil or butter
• 1 egg
• Salt and Pepper
• 1 tablespoon grated Parmesan cheese, plus more for serving
• 1 small or medium-sized Naan bread
• Smear of mayonnaise and Dijon mustard, if desired
• 2 slices of cooked bacon
• Cherry tomatoes, sliced in half
• 1 teaspoon chives or Italian Parsley
Instructions:
In a non-stick skillet, heat the olive oil or butter. Add the egg and season with salt and pepper. Sprinkle Parmesan cheese around the edges of the egg, and continue to cook to desired doneness.
Heat the Naan bread in a toaster oven, regular toaster, or microwave.
Smear the mayo and mustard on the Naan, then top with the fried egg, bacon, cherry tomatoes, fresh herbs and more Parmesan cheese. Enjoy!
