It’s Memorial Day weekend, the unofficial first weekend of summer and the beginning of grilled burgers, watermelon, citronella candles, and eating outside on the patio whenever possible.
I hope you’re doing something fun and relaxing, and taking a little time to enjoy it. I’ll be in my garden most of the weekend, planting vegetables and flowers, only coming inside for an icy lemonade and the occasional sandwich.
I’m keeping things easy this Sunday and sharing a few old favorite recipes. Millie’s Heavenly Potato Salad is about as classic as it gets, and there’s rarely a long summer weekend or Fourth of July without it.
These Mini Summer Berry Trifles first appeared over a Memorial Day weekend many years ago, when my Mom needed a dessert for a small backyard barbecue with friends that looked festive and didn’t require turning on an oven.
They’ve been a favorite summer dessert ever since.
And finally, don’t let anyone tell you refrigerated pie crust has no place in our lives.
This Peach Cobbler with Pie Crust comes together easily thanks to this helpful shortcut, bakes up golden and bubbling around the edges, and is excellent with a large scoop of vanilla ice cream.
