Naan BLT With Sun Dried Tomato Mayo

A bacon, lettuce, and tomato sandwich or, "BLT" was one of the first sandwiches invented in the history of mankind.

Ingredients You’ll Need:
Naan Bread: Large or small sized, found in the grocery store bakery or bread section.
Bacon: Natural, unsulfured bacon with no nitrates.
Lettuce: Organic butter lettuce, please. A large, crispy piece will work nicely.
Tomatoes: Firm, organic tomatoes, or even better, farmers market or home-grown.
Pesto and Mayo: The pesto gets mixed with the mayo and becomes a whole new, completely delicious thing. Try it on grilled shrimp or chicken too.

Stir the sun dried tomato pesto and mayonnaise together in a small bowl.
Bake the bacon in the oven until crispy and delicious.
Prep the naan bread by spritzing with a little water and warming it slightly in the microwave or oven. This helps it become bendable without breaking, and it tastes better, too.
Spoon the pesto/mayo mixture on the naan bread.
Add a big piece of butter lettuce and a few slices of fresh tomato.
Layer on several pieces of bacon.
Fold over, slice and enjoy.

Naan BLT With Sun Dried Tomato Mayo
A quick and delicious sandwich for lunch or dinner

Ingredients
▢ ¼ cup Mayonnaise
▢ 3 tsp Sun Dried Tomato Pesto store-bought
▢ 1 pound Bacon, natural, Applewood smoked if possible
▢ 2 pieces Naan Bread large Naan
▢ 1 ½ tbsp Olive Oil
▢ 4 pieces Butter Lettuce
▢ 2 Tomatoes, thinly sliced
Instructions
Heat the oven to 400F.
Stir together the mayonnaise and the sun dried tomato pesto In a small bowl, and set aside until ready to compile sandwich.
Using a large baking sheet lined with either aluminum foil or a shallow baking rack that fits inside it, place the bacon slices side by side. Bake the bacon for 20-25 minutes, until crispy. When removing bacon slices from the baking sheet, set them on a paper towel until ready to use.
Spritz the naan bread with a little bit of water (or pat a little water on them with your clean fingers) and heat in the microwave to soften (about 20 seconds.)
Alternatively, place naan on a large baking sheet in oven, spritz lightly (or sprinkle) with water, and bake just until warm, about 4 minutes.
Next, brush both sides of the naan with a thin coating of olive oil, then spoon a heaping tablespoon of sun dried tomato mayo on half of the warm Naan bread.
Add a piece of butter lettuce, a few slices of tomato, and 5-6 slices of bacon.
Fold the Naan in half, then slice and serve.
Notes
