Lean Ground Beef: One pound, to be exact.
Green Pepper: Bell peppers bring flavor and texture. Large pieces are fine.
Celery and Garlic: Big flavor boosters. You'll need three cloves garlic.
Green Chili's in a can: This really bumps up the flavor volume.
Onion: A large onion is an important chili ingredient.
Tomato Paste: To thicken the chili.
Fire Roasted Tomatoes: These have a bit more flavor and are perfect here.
Red Kidney Beans: This chili has beans, and we're not mad about it.
Guinness Beer: One big can, please.
Seasonings: Black pepper, a couple tablespoons of chili powder, as well as garlic powder, two teaspoons ground cumin, and kosher salt.
Add a cinnamon stick to this recipe if you'd like. It's traditional and totally optional!
Start with a large, non-stick skillet. Add some olive oil, onion, green pepper, garlic and celery and cook and stir with a wooden spoon for a few minutes over medium heat until everything is soft.
Use the same large skillet to cook the ground beef.
Next, add both to the slow cooker. NOTE: Instructions for making this recipe in a large dutch oven are provided in the recipe card as well.
4. Next, add the seasonings and Guinness Stout beer as well as the remaining ingredients.
5. Stir everything together, then slow cook on high for 3 hours.
Your delicious Guinness Stout Chili is ready to serve with optional toppings like sour cream, grated cheddar cheese and sliced green onions.
If you want your chili spicy, add in a half teaspoon of red pepper flakes.
If you don't want to use beer in this recipe, find a dark non-alcoholic beer or use beef stock instead.
Use ground turkey meat instead of beef in this recipe if you'd like.
Use black beans instead of red kidney beans if you'd like.

Can I use a different beer if I don't have Guinness on hand?
While Guinness beer is what makes this chili "Irish", you can certainly use another kind of dark, stout beer instead. The alcohol will cook out, leaving the rich flavor only. Or use a dark non-alcoholic beer, or beef stock.
Can I make this chili in advance?
Sure can. It freezes very well in an airtight container for up to 90 days.

Ingredients
▢ 1 tablespoon Olive Oil
▢ 2 tablespoons Butter
▢ 1 large Yellow Onion, chopped fine
▢ 3 stalks Celery, sliced thin
▢ 1 Green Pepper, seeded and cut into small dice
▢ 1 4-ounce can Green Chili's, diced
▢ 3 cloves Garlic, Crushed
▢ 1 pound Ground lean beef
▢ 1 28 ounces Fire Roasted Tomatoes, diced
▢ 2 15-ounce cans Kidney Beans, drained and rinsed
▢ 2 tablespoons Chili Powder
▢ 2 teaspoons Cumin
▢ 2 teaspoons Garlic Powder
▢ 1 teaspoon Kosher salt
▢ ½ teaspoon Ground Black Pepper
▢ ½ teaspoon Oregano, dried, ground
▢ ½ teaspoon Red Pepper flakes (optional)
▢ 2 tablespoons Tomato Paste
▢ 1 14 ounce can Guinness Stout Beer See notes
▢ Garnishes such as sour cream, cilantro, green onion, sliced cherry tomatoes, tortilla chips, cheddar cheese as desired.
Instructions
SLOW COOKER METHOD:
In a large skillet, melt the olive oil and butter. Add in the chopped onion, celery, green pepper, green chilies and a pinch of salt cook on medium heat until they are soft and cooked, about 4-6 minutes. Stir in the garlic and cook for 30 seconds.
Transfer this to a slow cooker (at least 6 quart size).
Next, in the same skillet, brown the beef completely, then add it to the slow cooker with the fire roasted tomatoes, and the kidney beans.
Stir in the chili powder, cumin, garlic powder, salt, black pepper, oregano, red pepper flakes (if you want it spicy) the tomato paste and the beer and stir to combine.
Cook in the slow cooker on high for 3 hours. Garnish with cheddar cheese, sour cream, green onions, tortilla chips and fresh cilantro as desired.
STOVE TOP METHOD:
Follow the directions above, but instead of the slow cooker, add the ingredients instead into a large stock pot and let it cook on medium to medium-low heat for 30-45 minutes, or up to 2 hours on low with the lid on. Note that the longer you simmer the chili, the more flavorful it will be.
Garnish and serve!
