Fruity Summer Toast
Here's a quick & easy taste of summer, no recipe required.
This is the kind of toast that belongs on a table on the back porch, with the sunlight spilling across your plate and maybe a bowl of yogurt with granola and some hot tea, too.
In other words, a perfect August breakfast.
This toast isn’t really a recipe—just fruity, creamy, crunchy goodness you'll want before the summer strawberries vanish.
Get some good quality bread—I love a fresh loaf from the bakery—some softened cream cheese, and your choice of strawberries, blueberries, blackberries or any other berry or stone fruit you’d like (sliced peaches would be tasty).
Peak-season fruit does the heavy lifting here, so use whatever you’ve got on hand for this toast.
All that’s involved here is a thick slice of toasted bread, a big swoosh of cream cheese, as many fresh berries as you can fit, a few sliced almonds if you’d like, and a finish of honey (or your fanciest fruity olive oil) over the top.
Done and delicious.
This toast is equal parts fancy and laid-back—great for brunch or an afternoon snack, and never, ever boring with all the different ways you can top it.

Summer Fruit Toast
Makes one large toast.
For this easy recipe, gather the following ingredients:
Thick slice of fresh bread, a bakery-style artisan loaf is best.
Fresh berries of your choice. Sliced strawberries, raspberries, blueberries, blackberries by themselves or in any combination.
Softened creamed cheese, about 3 tablespoons per slice (this amount will depend on how big your bread is.)
Honey, for drizzling on top.
Sliced Almonds and fresh mint to garnish, if desired.
Extra virgin olive oil, optional.
Toast the bread in a broiler, toaster oven or toaster. Generously smear the cream cheese on the warm toast.
Top with fruit, sprinkle with sliced almonds, then drizzle with honey, olive oil, or both.
