Nectarine Toast With Honey Goat Cheese

Nectarine Toast with Honey Goat Cheese is great for breakfast or snacks

Ingredients

  • 4 slices Sourdough bread, 1" slices
  • 4 ounces Goat Cheese, lightly softened
  • 1 tablespoon Olive oil
  • 2 teaspoons Honey
  • 1/4 teaspoon Salt
  • 4 Nectarines, organic, washed and dried
  • 3 tbsp Honey, for serving
  • 1/4 tsp Flake Sea Salt, for serving
  • 3 tbsp Basil, fresh, very small leaves or sliced thin

Instructions

  • Heat the oven to the broil setting
    Prepare a baking sheet by lining it with parchment paper
  • Drizzle the sourdough bread slices with olive oil, just enough to lightly cover each slice
    Place four bread slices on a baking sheet
  • Place the baking sheet on the middle rack of oven, broil the bread until lightly brown and crispy on the edges
  • Remove from oven and turn slices over
    Continue to broil for a minute or so, just to lightly crisp up the other side
  • Remove toasts from the oven and set aside until ready to assemble
  • Put the goat cheese, olive oil, and honey in a medium-sized bowl
  • Whip the ingredients together using an electric hand-held mixer until very smooth and light in texture, about 2 minutes.
  • Add the salt and continue to mix for another minute until combined.
  • Slice the nectarines into 1/2" pieces and place in a medium-sized bowl. If the nectarines are tart, add a teaspoon of honey and gently toss.
  • To assemble the toasts, divide the cheese mixture among the 4 toasts, about 2 tablespoons of cheese per slice.
  • Arrange some nectarine slices on top
  • Drizzle with a teaspoon of honey, a pinch of flake sea salt, and some fresh basil leaves and serve.

Notes

  • I use a bakery round sourdough loaf and cut the slices approximately 1" thick.
