Heat the oven to the broil setting Prepare a baking sheet by lining it with parchment paper Drizzle the sourdough bread slices with olive oil, just enough to lightly cover each slicePlace four bread slices on a baking sheet Place the baking sheet on the middle rack of oven, broil the bread until lightly brown and crispy on the edges
Remove from oven and turn slices overContinue to broil for a minute or so, just to lightly crisp up the other side Remove toasts from the oven and set aside until ready to assemble
Put the goat cheese, olive oil, and honey in a medium-sized bowl
Whip the ingredients together using an electric hand-held mixer until very smooth and light in texture, about 2 minutes.
Add the salt and continue to mix for another minute until combined.
Slice the nectarines into 1/2" pieces and place in a medium-sized bowl. If the nectarines are tart, add a teaspoon of honey and gently toss.
To assemble the toasts, divide the cheese mixture among the 4 toasts, about 2 tablespoons of cheese per slice.
Arrange some nectarine slices on top
Drizzle with a teaspoon of honey, a pinch of flake sea salt, and some fresh basil leaves and serve.
