Easy Salsa Mix Recipe

Ingredients

  • 4 Medium-sized Roma Tomatoes, chopped fine, drained
  • 2 Medium "regular" Tomatoes, chopped fine and drained
  • cup White Onion, chopped fine
  • 3 teaspoons Jalapeno, minced, seeds removed
  • 3 tablespoons Cilantro, chopped, loosely packed Can use Italian Parsley
  • 1-2 Garlic cloves, minced
  • 2 tablespoons Fresh Lime Juice
  • teaspoons Kosher salt

Instructions

  • Remove the ends off of all the tomatoes and chop them into rough ½ inch pieces, leaving any liquid they produce behind. Transfer the chopped tomatoes to a medium-sized bowl.
  • Add the finely chopped white onion to the bowl.
    Cut the jalapeno in half and remove the seeds. Cut into thin strips and then mince enough for 2 teaspoons unless you'd like it hotter, then add another teaspoon or to taste.
  • Chop the cilantro (or Italian Parsley) and add it to the bowl. Add the minced garlic too.
    Add the fresh lime juice and salt, toss to combine everything. Taste and adjust seasoning to your preference.
  • Pull one cup of the salsa out and pulse in a food processor or blender several times, then add it back into the bowl and combine with a spoon. This is optional, but suggested for overall texture.
    If your tomatoes were excessively juicy, you can spoon some of the watery juicy out if needed before serving.
    Makes about 3 cups of mild to medium spiced salsa.

Notes

  • Nutrition information are estimates, this recipe makes approximately 3 cups of salsa. 
  • Use Italian Parsley if you don't like cilantro. 
  • Uses more jalapeno if you like it spicier.
  • Use any type of medium-sized "regular" tomato in addition to the Roma's in this recipe. 
  • Roll the lime with the palm of your hand before squeezing, you'll get more juice that way. 
  • Use garlic powder instead of fresh garlic if you'd like.
