Ingredients

  • 1 loaf Bakery Loaf of Bread, about 10" Any artisan loaf is good, sourdough or ciabatta
  • 1 stick Butter, softened to room temperature
  • cup Italian Parsley, chopped fine
  • 3 cloves Garlic, fresh, crushed and chopped finely
  • 2 tablespoons Olive Oil
  • ½ teaspoon Kosher salt
  • ½ teaspoon Pepper, freshly ground
  • ¾ cup Parmesan cheese, grated
  • 3 Green onions, white part only, finely chopped
  • ½ teaspoon Hot sauce
  • 1 tablespoon Olive oil

Instructions

  • Preheat oven to 425F degrees.
  • Cut slices down into the bread with a serrated knife, almost to the bottom leaving about an inch to keep the loaf connected without cutting it into individual pieces. The "slits" should be about 2" (inches) each, and you'll be spooning the butter mixture inside each slit.
  • In a medium-sized bowl, combine the softened butter, the parsley, the garlic, the olive oil, the salt & pepper, the green onions and the hot sauce. Stir to combine all the ingredients.
  • Using a small spatula or butter knife, scoop a tablespoon to start inside each slit of bread, pushing it down to the bottom without breaking the loaf apart into individual pieces. Repeat until all all the garlic butter is used. Drizzle some olive oil over the top of the loaf.
    Gently push the loaf together, then wrap it loosely in a large piece of foil that's been lined with parchment paper (or just use foil). Set it on a large baking sheet and place on lower rack of the oven for 25 minutes.
  • Remove loaf from the oven and gently open the foil packet, letting it stay open. Put the loaf back in the oven for about 5 minutes to toast the top of the loaf. Remove from oven and enjoy!

Notes

  • If you aren't a fan of chunks of garlic, use a garlic press to make the garlic pieces smaller. Use your knife to crush the garlic further if you'd like.
  • That said, you can use less than the 3 cloves called for here, or try it with a teaspoon of garlic powder instead of whole garlic.
  • I used a 10" inch fresh bakery loaf for this recipe, so if you're using larger than this, double the garlic butter mixture.
