Guinness Irish Chili Recipe

Ingredients

  • 1 tablespoon Olive Oil
  • 2 tablespoons Butter
  • 1 large Yellow Onion, chopped fine
  • 3 stalks Celery, sliced thin
  • 1 Green Pepper, seeded and cut into small dice
  • 1 4-ounce can Green Chili's, diced
  • 3 cloves Garlic, Crushed
  • 1 pound Ground lean beef
  • 1 28 ounces Fire Roasted Tomatoes, diced
  • 2 15-ounce cans Kidney Beans, drained and rinsed
  • 2 tablespoons Chili Powder
  • 2 teaspoons Cumin
  • 2 teaspoons Garlic Powder
  • 1 teaspoon Kosher salt
  • ½ teaspoon Ground Black Pepper
  • ½ teaspoon Oregano, dried, ground
  • ½ teaspoon Red Pepper flakes (optional)
  • 2 tablespoons Tomato Paste
  • 1 14 ounce can Guinness Stout Beer See notes
  • Garnishes such as sour cream, cilantro, green onion, sliced cherry tomatoes, tortilla chips, cheddar cheese as desired.

Instructions

  • SLOW COOKER METHOD:
  • In a large skillet, melt the olive oil and butter. Add in the chopped onion, celery, green pepper, green chilies and a pinch of salt cook on medium heat until they are soft and cooked, about 4-6 minutes. Stir in the garlic and cook for 30 seconds.
    Transfer this to a slow cooker (at least 6 quart size).
    Next, in the same skillet, brown the beef completely, then add it to the slow cooker with the fire roasted tomatoes, and the kidney beans.
    Stir in the chili powder, cumin, garlic powder, salt, black pepper, oregano, red pepper flakes (if you want it spicy) the tomato paste and the beer and stir to combine.
    Cook in the slow cooker on high for 3 hours. Garnish with cheddar cheese, sour cream, green onions, tortilla chips and fresh cilantro as desired.
  • STOVE TOP METHOD:
  • Follow the directions above, but instead of the slow cooker, add the ingredients instead into a large stock pot and let it cook on medium to medium-low heat for 30-45 minutes, or up to 2 hours on low with the lid on. Note that the longer you simmer the chili, the more flavorful it will be.
    Garnish and serve!

Notes

  • If you want your chili spicy, add in a half teaspoon of red pepper flakes. 
  • If you don't want to use beer in this recipe, find a dark non-alcoholic beer or use beef stock instead. 
  • Use ground turkey instead of beef if you prefer. 
  • Use black beans instead of red kidney beans if you'd like.
