Cookie Dough Bites Recipe

These delicious cookie dough bites are a perfect healthy snack!

Equipment

  • 1 Food Processor or Blender

Ingredients

  • 1 cup Dates, pitted See note
  • cup Peanut Butter, creamy See note
  • tablespoons Maple Syrup
  • ¼ teaspoon Kosher Salt (Diamond Crystal)
  • ⅔ cup Almond Flour See note
  • ½ teaspoon Vanilla Extract
  • ½ cup Mini Chocolate Chips, semi-sweet

Instructions

  • Pulse the pitted dates in a food processor until smooth.
  • Add the peanut butter, maple syrup, salt, almond flour and vanilla. Pulse until just combined.
  • Transfer to a medium-sized bowl and chill the mixture for 1-2 hours.
    Scoop rounded tablespoons of the bites into balls, then roll the tops in mini chocolate chips to serve.
    Store bites in the refrigerator for up to a week.

Notes

  • Use chunky peanut butter if you'd like.
  • If dates are dry, soak them in a cup or two of hot water for 10 minutes first, then drain.
  • Start with the 2/3 cup of almond flour, but if you feel the bites are excessively sticky (which will depend on how fresh your dates are) then add a tablespoon or two more of the almond flour, just enough to hold it together when you gently squeeze the mixture into a ball with your hands.  
  • Store the balls in the refrigerator in an airtight container for up to a week.
