- 1 cup Dates, pitted See note
- ⅓ cup Peanut Butter, creamy See note
- 1½ tablespoons Maple Syrup
- ¼ teaspoon Kosher Salt (Diamond Crystal)
- ⅔ cup Almond Flour See note
- ½ teaspoon Vanilla Extract
- ½ cup Mini Chocolate Chips, semi-sweet
Pulse the pitted dates in a food processor until smooth.
Add the peanut butter, maple syrup, salt, almond flour and vanilla. Pulse until just combined.
Transfer to a medium-sized bowl and chill the mixture for 1-2 hours. Scoop rounded tablespoons of the bites into balls, then roll the tops in mini chocolate chips to serve. Store bites in the refrigerator for up to a week.
- Use chunky peanut butter if you'd like.
- If dates are dry, soak them in a cup or two of hot water for 10 minutes first, then drain.
- Start with the 2/3 cup of almond flour, but if you feel the bites are excessively sticky (which will depend on how fresh your dates are) then add a tablespoon or two more of the almond flour, just enough to hold it together when you gently squeeze the mixture into a ball with your hands.
- Store the balls in the refrigerator in an airtight container for up to a week.
